Your first flaw: You have a force made up only of swordsmen. Swordsmen are weak vs cav and elephants. You should try recruiting some spearmen. Even cheap spearmen gain a massive damage and attack boost versus elephants and horses (Levy freemen get a default 25 extra damage, with anticavalry tactics they will do 125 damage) The ideal situation involves a cheap unit as well: Elephants are most lethal on the charge, so you want to dampen the charge with a cheap unit, then charge in with spears. You can recruit default auxiliaries, triarii, or auxilliary hoplites for this.
a second method is flaming arrows or javelins. These will rapidly panick elephants and cause them to run amok. The AI will kill the elephants the moment they do so. Velites are good for this. Leves are not: They have no flaming javelins.
Absent of the price increasing and limiting to battlefield capability, Elephants were already nerfed to the point they are unrealistic. You beating the elephants before does not equate you beating them again.
It is a high possibility that you fought a much skilled player, who used patch 9 elephants, than those players you previously fought who used more powerful patch7/8 elephants.
Any few elephants that survive the bombardment are easily finished off by decent cavalry or javelin chuckers. The trick is to swarm them, hit them from all directions, and crowd them, so they can't get up to a decent stomping speed.
