You can choose to transfer your character to a new server and you will take any blueprints (like guns/armor) that you have, your in-game currencies, and anything from your inventory that you can "buy" with the 20,000 points you get. But yes, you WILL start over at level 1 and will have to build everything again (including your vehicle which will NOT transfer with you).
I would suggest before you do this, you do a little research on what is best to take with you (what to spend the limited available points on, and what to NOT waste them on). Watch some YouTube vids or read some posts here on the forum (you can use the search feature to find them).
Sorry, I'm not more help. I'm pretty new to this game too. I did move one character to another server in order to play with a friend on a different server. I was only a few weeks in so it wasn't completely painful, but it did take me a few days to get back to where I was.
Novice and Normal are difficulty related; Manibus is the map [scenario] itself. There isn't really much of a difficulty bump between the two, but the main takeaway is that players on Novice servers start with literally nothing (fresh characters). It's not guaranteed, but perhaps expected, that players on Normal servers have at least earned starcrom and unlocked/upgraded blueprint weapons/armors.
Also, each server is a [season] of whichever map scenario you choose, like Manibus, and they all start from phase 1 (Manibus has 6 phases). These "seasons" are not the same as you're thinking; they do not last four months.
Super Anomaly Elite only appears on Normal Manibus (and Hard, but they are scrapping Hard mode). Only these drop Season Blueprint Calibration.
That's about it. The difference is more extreme with Hard mode but they are scrapping hard mode so you don't need to worry about it.
