Are there Cows/Bison in the game now?
Ref Cow hide needed to make Bison Head.

They sure are, they're just called Buffalo though from what I've seen so far. (Yes I know they're basically the same)

Actually IRL 'Buffalo' refers specifically to Water Buffalo you find in Africa, while the term Bison is more correct for the north american beast.
