Easy difficulty for Lea Lab
I just can't solo this.
My gear is not that bad: Gold Weapon, 4 Gold Gear, 2 Purple. All maxed out (besides the blueprints)
I can solo a few bosses, but Lea Lab is just way too hard.
I play this on easy and didn't have too much trouble so far, but this is just beyond me.
Am I supposed to start a new Season and farm more?
Every other boss can be played on easy, why not this?

Your build isn't the problem. Lea is intended for a four player group so trying to solo it is very hard.

The dungeon itself does not have any unique loot beyond one deviation, meaning you ignore it and miss out on very little.

But you can't continue the story. There should be a story mode.

They learned and changed Way of Winter Zone of Haze to a Side quest rather than Main quest.

But the idea of forced grouping for story content isn't rare in MMO.

cook food with decent buff, and craft a lot of portable turret and spam the hell out of it
There are some videos about lea soloruns. If you haven't looked at one yet, do that first. I wouldn't recommend all weapons for Lea solo either. I finished Lea solo with the shock rifle it went quite well. I'm currently playing a fire build that I wouldn't recommend for this.

Sidequest or mainquest doesn't really matter. The game still gives me a navpoint and a route there "This, here, right here. You gotta do this!". If I stop tracking it it's just back next login. Heck, it already gave me task to see the NPC giving out the quest as soon as I logged in. I had no option to not take it. So while still optional they really want you to do this Task.

Suggested solutions would be:
1) An option to stop tracking the Task permanently.
2) An option to cancel the Task entirely.
3) The actual Task takes you to the entrance and ends there. Whether you enter or not is up to you.
4) Make Normal and Hard variants of these dungeons.

They are Raid, they aren't supposed to be easy mode. Even in other MMO the "easy" mode of these Raids require partying up. You aren't supposed to solo them.

Take FFXIV for example, many of the 8 person full party or 24 person alliance content require more than one person to do wipe mechanic. And I'm not talking about the Hardcore version of those.

Soloing LEA labs is no joke. These are the "superboss" dungeons of the game and not meant for any but the most hardcore. In a group you'll have a good chance but on your own you'll have to prepare a LOT and stack a bunch of food buffs. I did it with a bingo + jaws build but it wasn't easy. If you're not doing at least 50K DPS with your highest tier weapons then you are probably not ready.
