How things play out after the first season we don't know yet. It might be that there will be something like advanced servers that will give new players without gear a harder time, so you might want to start on a novice server anyways.
We also don't know when or how servers are going to be unlocked again so you can play with others and create characters on these servers.
There is no big reason why you can't just start on an available servers and give it a try. If you decide to play elsewhere down the line after there is more information, you can always make another character on a different server.
Also most things remain with your character, and only a few things get reset. The long term progression will all stay with your character.
You need to farm 50k iron, wood and stone in the first week and donate it.
Then in the second weeek you have to donate 10k starchrome, they also take the first 30 mods you find on each difficulty.
