There are a few things to consider with the current game state when picking servers.
1) There are PVE and PVP servers. Pick the right type you'd like depending on your preferred playstyle. It's in their names wether they are PVE or PVP so it should be pretty obvious.
2) Players between servers cannot play with each other. You can switch between worlds, which are like instances within the server, but servers are currently completely seperated.
3) Registration to servers is currently limited. We don't know when servers will be unlocked again, but expect to not be able to have others join your servers a few days after they started. In other words if you plan to play with friends, joining now will essentially keep them from joining you later down the line, unless they make a character on the same server in the same few days its open. Those servers get locked fast and its one of the big issues currently.
4) Cosmetics and bought items are currently character locked, but should be account bound instead sometime mid this month. Just something to keep in mind, but buying things on two different characters is not necessary.
5) Currently all servers are "Novice" and they are the ones new players are supposed to start with. Later down the line we will likely see other types, with different maps and so on, but how they exactly work is really unknown at this time.
If I choose a PvE server, does that mean that PvP is no where to be seen, or are there still PvP events I may, intentionally or unintentionally, find myself in?
If I choose a PvP server, I assume that even "full" PvP has some anti-griefing things in place?
