Same here, I've maxed my render distance but I still couldn't see enemies until I was pretty much on top of them. I also noticed that when I look away things (like ore & rocks) despawn, and when I look back it takes a second to render back. Pretty sure it's not my computer as this didn't happen until after the update.

Your system is more than capable of running the game so your issue is unlikely to be the issue but not impossible either.
To figure out the likely cause when the game is running open performance manager. If you see unusual spikes (especially if they stay) you may be able to identify your problem.
Some problems with your system could be out of date drivers, incorrect setting for your ram, not running in dual channel for your ram. not having thermal paste on your cpu, a dying cpu or gpu, improper cooling, outdated .netframework, loose ethernet cables, gaming on wifi with interference or packet loss.
With that said developers have also recognized some networking issues on their end and they are working to fix this. An issue that may not be fixed is if you are too far from the server. This will cause you to have really high ping and our brothers and sisters from South Africa and Australia for example have made please for servers in their regions (I hope you guys get it soon).
Another issue separate from your issues you may have with your system and lag from a bogged down network or pin is netcode. Basically we are all playing simultaneously our own version of the game and netcode. Essentially stitches all these versions together so that actions taken that are affected by ping that would create an impossible situation are unified. So for example if we both go to mine a iron node and we have different ping the server has to decide if what you see or what I see is the server reality. We see things slightly differently because of the speed packets (data) is sent to the server. Netcode helps to mediate what the server accepts so neither of us feels to marginalized.
