Where can I get those helper creatures that can gather materials like wood and ore?

You can find the ore ones randomly when mining, I found a 2nd one when mining silver ore

You can find them randomly as loot but the beaver that collects wood you can find on the docks of Meyer's Market as a static spawn

Some missions reward them, The mining one you should get one of if you follow the quests and talk to the guy in the first town that gives you two missions for deviant hunting.
