What class to pick?
Its been a while since I played, and since its been a while, I need a new character...
But what class to pick?
Warrior does more damage and has higher armor (Beat the game with it, so no.)
Thief sucks at the beginning, but gets better later. (Almost finished the game with it, but then I got stuck. So no.)
Mage uses tons of debuffs with nice attacks. (Tested it, but I didn't get far, lost interest... Maybe)
Jew. Just Jew. Nothing to say. (Got stuck at the Underpants Gnomes part...)

So either Mage or Jew, which one to choose?

Both are entirely playable. I use the same basic strategy across all classes: Stack on as many debuffs as are practical, using bleed weapons, burn patches or abilities, gross patches or abilities, and pissed off abilities. Buy the perks that amplify your damage against enemies inflicted with these debuffs, and reduce the damage you take from them. Buy the Brain Food perk and abuse Butters' healing ability to replentish PP almost every turn.

Theoretically Jew is supposed to work best when there's lots of debuffs on you, but that's dumb IMO. My enemies are the ones who are supposed to be bleeding, burning, and critically low on HP, not me. ;)

Mage's Dragon Breath/Pyre Ball abilities are seriously abusable if you buy the Pyromaniac perk and pair it with patches and strap-ons that amplify burning damage or the sticker that replentishes PP for burning enemies. In this way Dragons Breath can easily pay for itself and become your default attack. Then use Lightning Volt, Cone of Frost and Pyre Ball as appropriate. Dust of Dreams is handy early on but quickly loses utility once you start facing bosses. Mage is probably the easiest class to play, IMHO; the abilties start out kinda nice and just get better as you put points into them.

Jew has also has a nice set of abilities that can potentially add debuffs, although in some cases you'll have to buy some ranks to get to them. Sling of David adds Pissed Off and is good against those back-rank support enemies, Dreidel can be a good AoE fire ability tho you'll need to max it out, Jew-Jitsu can stun (I wouldn't put many points into it tho), Circum-scythe adds bleeding and grossout if you put points into it, and the Plagues you should definitely max out as they do a little of everything (buff you, debuff enemies, AoE damage).

Also, how did you get stuck with Thief/Underpants Gnomes?

I think I was under-leveled or under-geared...
