If they increase their skill in another weapon enough to surpass whatever their "style" is, the style listed will change to the corresponding skill.
The style also does not block them from taking up any other weapon, if the weapon in question appears to have more damage capability than something they have of their own skill.
As a note with shields, they do not block martial arts from being used, so you can still equip a shield and do martial arts at the same time if you so desire.
I have one wierdo resident that has taken up duel-wielding shields, and he's making do just fine.
