Honestly it's what classes you both enjoy playing.
I also played a Beorning with a Hunter friend and that went really well. The only problem is since he's ranged and wasn't the most patient person he'd always grab aggro and I'd have to fight to take it off him while he took more damage than I did. The good thing was that Hearten alone(unless you get far enough into the red tree) is a good enough heal to sustain both yourself and your friend, but a yellow Beorn has heals for days.
Other than that I haven't had much experience playing duo with a friend for more than a skirm/instance or two. As you pointed out a Captain paired with anything would work wonders, maybe not a LM, but I may be wrong, heck with an LM you'll have pretty much a 4 man group even though there's only 2 players thanks to pets, lol.
tl;dr: Typically as you guessed, you want one member of the duo to have some healing ability or sustainability at the very least. I mean you'll get far with two hunters or two champs since at the start you'll just roll everything in seconds flat but once you start getting to the difficult stuff you'll hit a wall.
