Going Woodworking/Tailor/Forester is an option but the Scholar hunter class items are way more useful imo.
Going all three gathering is decent too, Scholar/Forester/Prospector. This is what I do with my main Hunter so I can gather everything on the character I play the most and have other characters that can craft gear instead.
Scholar is a top pick for Hunter so that you can craft your own class consumables, like Light Oil, Fire Oil and the other buff consumables Scholar makes. But, you can always use another character if you want to.
If you are interested in making gold by selling mats on the auction house then take the three gathering options which still lets you craft your own class items.
You can either mail the mats or use the shared bank.
Just remember that you'll have to process leather on your Hunter first so that your Minstrel can use them. Can be a little annoying having to log in and out all the time to do that when trying to craft lots at once. You can't just process them all blindly and send them over because some recipes need different types of processing.
Putting Scholar on the minstrel instead is an option so you can avoid that. You still find a good amount of Scholar items from mobs and chests/bodies/packs/etc. so you don't absolutely need to gather the nodes for it on your main.
