Find some people to play with. You can do 90% of the content without a group, but that last 10% is the most challenging and entertaining. You're probably not going to blindly find a group by chance encounter anymore, as most people aren't doing beginner area quests, so you will have to actively search for a kin. Pick one that plays when you do and plays how you play.
Beside that, race/class is mostly personal preference. If you like being a glass cannon, try a hunter or minstrel. If you prefer to tank, be a guardian. If you like support roles, try captain, lore master, or burglar. Aside from excluded classes, all the races are basically the same. A trivial stat boost there, a side skill there, but mostly they are cosmetic. You cannot gimp yourself with your race choice.
Don't be afraid to ask questions in chat once you have access. It's a good community and you'll get your question answered.
When you create those characters on the servers, make them different classes so you can see what they're like. Minstrel's seems petty overpowered, atleast in the lower level area's, Hunters fun, if you're willing to spend some money Warden's good. Really depends on you. All solo fairly well.
