Pfft, I configured my controller so that the second stick does nothing; I stunt with the D-Pad.
You should be able to configure the controller through the config tool to work. If the controller uses DirectInput, you may have difficulty navigating menus. Flight sections would be an issue without a Y-Axis though; if your wheel has a D-pad in the middle, you may be able to use your thumb for that, but I don't think that would work well. End result is doable, but probably not practical.
If you're talking "roll while drifting in flight", I don't, and don't need to; when I do I'm just not adjusting the drift rate, and rolling from a neutral drift corner (if that makes any sense). If you're talking "roll while drifting off jumps", I do it very carefully. My controller's mapped to feel like the classic controller did for Mario Kart Wii.

Nah, usually I just take my thumb off the steering stick for a stunt or four.
Deciding if you should purchase a logitech g27 based on wether it can be used with Sonic Racing Transformed? You're weird and you have too much money :) I say go for it!
This looks like a job for PPJoy + GlovePIE + decent Wii Wheel script - Oh, yeah, that's right.... the first live update and every other update prior to it breaks support for PPJoy.
