What's the best instrument you've found so far?
My two personal favorites are the harp and the rock organ. So many of my favorite video game and anime songs sound GLORIOUS on them. The rock organ is best instrument 10/10.

Some songs just seem to sound better on some instruments. (Note length/cascading)

I found an ocarina on my last character.
Everything I played on it sounded like gold.

Hammered dulcimer. Sounds -amazing-.

I found a Harmonica in my first game and just thought it was a decorative item and ended up destroying it when I needed some more space, not realizing I can actually play a tune on it.

Since then with many characters started I've only found a banjo and was slightly disappointed when I didn't find dueling banjo's on the list of tunes I could play with it.

There's no easy way to convert mp3 to .abc files and it sounds like complete crap if you do manage it. What you need to do is find the songs in midi format, then convert those to .abc.
A friend does all the converting for me and I don't know what program he uses for it.

Which anime songs specifically @op?
I like the acoustic guitar the most, personally.

Angel Beats, Zero no Tsukaima, Attack on Titan, and a whole bunch of other things I dont recognize. My friend occasionally sends me a zip file with all his songs in it.
keytar that is all.

Get the 1 handed instruments and use 2 instruments at once, for example both microphones. It creates a MASTERPEICE

I used Maestro to make .abcs when I still played LOTRO, but I haven't really messed with music in this game. Maestro probably isn't going to work well on Starbound.

I'm still finding new instruments, to my surprise, though I've been collecting one of each since the beginning. I'm probably partial to the clarinet. Haven't found an oboe, though, or cello, string bass, viola, tuba, french horn, euphonium, etc. Trombone. A lot of similar things for some reason, instead of actual variety.
