OpenGL mode uses the OpenGL rendering engine, while normal mode doesn't? Hard to explain more than that if you don't have a working knowledge of rendering codecs.

Question is... which one is better at rendering? OpenGL or the default?

any GPU with Linux or any OS with AMD GPU, go with OpenGL. NVidia GPU with Windows/Mac go with default

That depends entirely on how your graphics card, current drivers and OS handle things.
Rule of thumb: If you are a standard windows user go with default.

Normal is DirectX, OpenGL is, well, OpenGL. Generally speaking on Windows DirectX runs better, but you can try both and see which is better, your mileage may vary. I didn't see much difference personally, on account of boasting a GTX 770, but OpenGL seems to be just a tiny bit better with texture streaming.
