However, if you right-click Unstable, go to Properties, and go to the Betas tab, you can opt into Nightly, which is updated... wait for it :D... nightly!
Nightly content usually gets pushed to Unstable to get the kinks worked out which eventually makes its way to Stable.
Right now, on Nightly, you will have access to these cool things coming Stables way (eventually):
1. Colonies. Build your own colonies and receive rent!
2. Better planet designs. The planet biomes and sub-biomes have gotten a beauty overhaul.
3. Better combat. More varied hostile enemies on the surface with better elemental attacks. Melee seems to be improving, as well- you get swiped by an enemy sword, and you get slowed, which makes it harder to just run in and kill a group of enemies.
4. The ability to sell your space crap! Fine-uh-ly, there are useful merchants!
5. Floran Party Boss is now a Spider-like creature.
...there's so much more, but I won't spoil it all for you, in case you feel like dipping your toe in or just waiting for it to eventually be officially Stable.
A note- It is possible Nightly may require you to restart your progress more often than on Stable. I have not had to yet, and I have spent a good amount of time on Nightly (says I only have 24 hrs, but I play offline alot). I've been spending more time in Nightly than Stable as I feel the game is just better with everything they have added.

I'll give you the general defention in case what these guys don't make any sense.
Stale is where everything is... well stable, you're less likely to get crahes or horrible problems such as bugs that could potentially mess up your program, such as save curruption, messing other stuff on your computer or your computer's hardware.
Unstable, normally reffers to betas, alphas and Early Access games and software where, chances are, there are going to be loads of problems, some of them could really mess things up for you.
one of them doesn't have an Unstable at the end.
