Just get in a habit of talking to every npc after you do a quest, sometimes they don't tell you they want to join until you talk first
Their clothing will change/look different after returning to the NPC and turning in the mission. It's easily noticable.

therd, rare decorative items (costume, furnature...)
and if u repeat quest for one NPC, that NPC will join as your crew, and crew number gives u permission for high level ship licence.
