First, you will need to unpack the assets of the game. http://starbounder.org/Help:Unpacking_Game_Files will help you with that step.
Once you have the game files unpacked and in a convenient location, search inside of them for the "npc" folder, then start browsing files. All of the files in there should be readable with text readers even though they don't have standard text-document suffixes.
To find out what kind of crew members a particular NPC type can become, look for the "nextNpcType" section in each file, which will have the probabilities for the different crew member positions that NPC can become.
Hopefully this helps you with your goals.
P.S. You might be wondering what "crewmember" without anything else on the end means. That's the name for Soldier crew members (the red-shirt ones). The other ones should be self-explanatory.
