How to disable mods without unsubscribing in workshop?

You want to disable specific mods or just remove all of them? I know the answer for 1 of them.

All of them. What I did now was making an workshop collection that worked too

Oh, you can start the game modless by going to where the .exe is located and opening the game directly without Steam. Be mindful that it will use the same universe, but you can copy the whol game folder to another place.

That way the game will use the mod folder besides the .exe, and not the one provided by Steam.
