Either way, both are ready to run on recent systems, and both can be easily upgraded using TFix.
Well, I guess I could add another question; in general, are the GOG versions of older games usually more compatible with newer systems and Windows 7 than is Steam? Or is that not really a valid generalization?

The team at GOG rarely is responsible for updating the game per say. Most of the time what they do is pack an old game with emulators, wrappers and changes to compatibility in system. And while releases of Dos games on Steam usually come with DosBox, I'm surprise in some incidents like Thief, where they don't come with additional fixes. Let's remind however, it's up to publisher to patch the games. It should be also in publishers interest to offer more or less equal deal on all platforms of digital distribution... and recently - that's what we've been getting on Steam comparing to GOG.
When it comes to Thief, Square Enix doesn't seem to care about Steam version of Thief any more. Maybe the fact that NuThief is so far from original has something to do with it.
I'm going to download the New Dark patch, I believe that's all the necessary work in order to play them.
If not, why not, and should Square Enix or whoever owns the rights be petitioned?
Because the current version on GOG works out-of-the-box even on Windows 10.
