Weapon choice actually changes the flow of the game considerably. DEX and STR particularly. For instance:
Strength weapons are. . .
-Slower
-Swing wider (and thus more likely to bounce off walls)
-Do more poise damage (Just wait until you see a Silver/Black Knight recoil from a heavy weapon strike, or get flattend (literally) by a super heavy weapon like a great sword or great axe.
-get powerful much quicker than dex thanks to the 2H boost
-Can actually be used to block as they have good stability and damage reduction (compared to dex weapons
Then there's the various magics. Most people will dabble in pyromancy. Or play around with a couple miracles early on. But spells like Tranquil Walk of Peace can be very fun in PvE too. Even mini-bosses and the bigger mobs are affected by TwoP and will move and attack about 20% slower than normal.
Armor: Ninja Gear
Right Hand: Chaos Blade / Nothing (Optional Claw)
Left Hand: Composite Bow / Pyromancy Glove
The Chaos Blade is your big damage dealer BUT it hurts you every time you hit with it, so you'll be using your bow / pyro glove to deal with enemies. No shield to speak of. with your bow in your left hand you can quickly swap between sword and bow. Plus it has the fashion souls effect of having your Uchi / Chaos Blade stowed in it's sheath looking stylish while you head-shot enemies.
This is a no-shield and low armor run. Your mantra will be "I have no armor, I make mobility my armor" You get very good at dodging when you can't depend on a wall of steel to keep your enemy outside of your happy place.
Sit back and...watch the..."magic"? Need to be into that kinda stuff, though.
