2. Keep running towards the hydra. Come close until you're about knee deep in the lake. Don't go too far or you'll drown.
3. Shields up. Hydra will attack you.
4. Chop off the head, one at a time. Repeat until none left. (the last hydra will be a bit tricky since it will mostly attack away from your position. Bow and arrow or a weapon with long range might help)
I didn't go to Ash Lake, by the way (the 759th I ♥♥♥♥♥♥ up the drop in the Great Hollow and fell a million stories I just gave up and kept on with the campaign, Dragon covenant sounded interesting, but not THAT interesting anyway), so is that Hydra any different than the one at Darkroot? Because that one was surprisingly easy to beat once I got close enough.

To answer your question the Hydra in the Ash Lake can fly (By spitting water underneath it and flying across the beach to get to the other side). However if you follow my strategy that I posted above you can kill him without ever seeing him fly (He dies just as easy as the Darkroot Basin Hydra).
Seriously though the main strategy with any boss in this game is to just rush those bi*&hes. If you run away after they do something startling you will probably die. PENETRATE THEM WITH YOUR DI*CK OF JUSTICE! IF YOU"RE A GIRL THEN PENETRATE THEM WITH YOUR DILDO OF VIRTUE!
