You just sprint, jump, then hit attack right? Going full noob here, but I don't care. This game is great, but my god...
1: Go to the cemetery, next to the Fire Link Shrine. There is a Zweihander hidden..don't even try to kill the skeletons..just leave them behind and find the weapon.

2: Upgrade this weapon to +5! The easiest Smith to find is beneath the Fire Link Shrine.

If you manage to get to Undead Parish (after Taurus Demon) go to Andrei; he is also the Smith who upgrades from +5 -> +6 and from +10 to +11

3: If you don't want to push Strength but Dex then I can recommend to do one thing:
-> Undead Burg -> Undead Merchant -> Buy a bow first and some arrows; then you can kill him to get the Uchigatana...however!! IF YOU KILL HIM, he will not be available anymore until you start a new playthrough. So, do what you think..this Uchigatana, is one of the best weapons (Dex) in the game when upgraded. Killing him will give you the Residence Key + Uchigatana.

So..hope I was able to help a bit.
And the Black Knight, don't get me started. I'm a Knight class, so my parry feels ponderously slow, but even still, his attacks are so bleeding fast I can't ever seem to parry them successfully. I can parry most other enemies I've encountered so far, but the BK, just damn.
TBH, it feels like why I'm losing could be solved by very clever footwork and a good understanding of what to use on what enemy, but I know that's the long road.
I'm sure I'll eventually go insane and do at least some of the things you suggest. I'm probably limiting myself too much, so should just expect the difficulty to stay as high as it is.
