As for weapon choice, I was DEX/INT with crystal magic weapon, deals significant damage on falchion.

Flying attack: break lock and roll side ways.
Flying Flame Breath: Break lock and run away as fast as possible. Don't roll as this consumes stamina too quickly, leaving you vulnerable once he lands.
Sit up Flame breath: Break lock and run towards his left leg
Grab attack: Roll AWAY from him unless you are right up against his face. This usually dodges it while the hitboxes when dodging to the side are a little sketchy at times. DON'T PANIC if this hits you, the debuff doesn't last very long.
Stomps: Roll away, but avoid his back legs where the stomps have deceptively long reach.
Running attack where he spins around and breathes flame: break lock and run away, rolling isn't quick enough if he is close enough.
Tail Spin: Just Block it if you have a half decent shield.
Tail slam: Try not to roll too early, as this attack has deceptive tracking sometimes.
I've beaten kalameet several times on NG+ and he's easily one of the hardest bosses in the game, but also one of the most fun once you get the dodge timing's down.
As for not dealing a lot of damage, his resistances to anything but lightning are a nightmare, so sunlight blade on a good, fast weapon is your best bet. Otherwise, it's a war of attrition, so make sure you've got 20 estus.
The strategy is staying close, in front of him. Block his attacks, then hit him once. Then lower the shield for stamina regen, then repeat. Roll away from fire and Calamity and drink estus or attack while he's doing these.
This is how I beat him past NG7 and it works. Last time I even did it on the first try.
And I recommend that do not lock on him, because the lock-on camera causes disadvantage to observe its moves.
