Str in this game unfortunately is always going to be slow weapons. Str is reserved to hammers and the heaviest categories. You can try black knight halberd, but that requires 18 dex. You're gonna have to rely on elementals if you want to go faster.
Fast and Str does not go together when describing weapons in this game.
I'm a big fan of the man-serpent greatsword on my pure strength build. The greatswords in general are a great balance of power and speed, but might still feel slow if you're used to some of the really zippy dex weapons.
It honestly looks like elementals are the way to go. 50 points into str for no benefit... I think I'm gonna' just go int build. There's no point to str for me...

Personally I found that the lighter Black Knight weapons are a great balance between hitting like a truck and not being slow as ♥♥♥♥. If you're really late-game you could craft the cursed version of the Greatsword of Artorias (any non-broken straight sword +10 with Soul of Sif) , and if you're really REALLY late-game you could make the non-cursed version of the same weapon (Broken Sword +10 with Soul of Sif. Yes, the one you got at the start of the game)
