EDIT: Stop spoiling the game for yourself by reading useless guides.
You can level up by going into the forest (the way right ahead of Andre the Blacksmith) :
- a titanite demon is guarding this pass, he gives a decent amount of xp
- after the demon, when you enter in the forest, if you go to your right after the first ent (where there is water on the floor) you can fight an hydra : it deals a lot of damage but the attack patern is always the same and you can kill it easely once you're used to it
- if you don't go to the right but ahead, you'll end up to the door closed with the Artorias symbol (buyable 20 000 souls to Andre), there is an illusory wall with a fire just next to the pile of bricks
- once you're here, you can pass the door requiring the symbol, you will have to fight forest guardians (they're not hard but you often agro 2), they give a nice amount of xp (2k-5k per guardian, if I remember well)
- else you can take the path just near the door, you will end in an area with multiple ennemies giving correct xp, and a boss (that gives not so much for a boss, but, well, he's not hard to kill)

I am indeed a noob so I want to appologise for stupid explanation about the things in the game in advance I still don't know the names of everything.
My weapon is a curved sword +5 (that means I have upgrated it 5 times I guess) with a B grade for Dexterity so I am leveling up that skill - Which by the description is the one for short swords.
Also I killed a knight in the forest by accident - it fell off to it's death - and got a super strong two handed curved sword or something from it that I can not use because I don't have enough power and dexterity.
Also I spent 20 000 souls in order to open a gate in the forest only to find out that it is full of ghosts knights and wizards that can shoot ...
I freaking love this game. It is so hardcore I have to ask people for help in the forums.
Thank god I didn't listen to the random people in internet telling me to kill the blacksmith.
Black Knight Halberd, on of the best items in term of physical damage, try to up your stats to use it and the game will be a lot funnier and a bit easier
That's waht I was talking about
The first knight you met is unique, once you killed him, he doesn't respawn
The caster is not unique, gives 2k souls and you can easely backstab him when he is charging his spell
The thief often stand in front of you, waiting for you to hit his shield : do a kick then hit him
The priest is annoying, you must make him loose life and when he is backing, run and backstab him (he is canalysing a heal spell)
The barbarian, well, he often fell from the cliff alone (stand near the cliff and wait for him to jump) (you can help him to fall with a kick)
If you really need to be a cheesy bastard and blitz through the early game, just join the gravelords.
