Also, pick a weapon that does not have very good scalings (like the washing pole, it has C in dexterity) and make it divine +10 or occult +5, then have another weapon with good dexterity scaling, put it to +15 and use Sunlight Blade on it. As a thief, at the beginning try to level your faith to 25, then join the sunlight convenant and you will get lightning spear. If you kill the male undead merchant, he drops the uchigatana, which can be a good weapon for your build.
The Darkmoon Bow is impractical but pretty cool, and also an option.
I've found the pyro to be a way better start than any other. Pyro with the Master Key, rush to Blighttown and farm the fat guys for an early Giant Club (don't worry about 1h'ing it, get the 16 or 18 str you need to 2h it). If you push farther in and grab Power Within early, and gnab the Red Tearstone Ring on the way back - you will be very set early on.
I would say get atleast 46 poise so you can trade hits well, especially if you're going to be up close and potentially taking a hit or two. There's many different combinations of gear/miracles you can use as Dex/Faith, you just gotta find your own favorites as you level. GLHF!
