anyway, the best way to fight them 1vs2 (especially in NG) is to kill ornstein first and use pillars to keep smough away. you must keep them both on the screen all the time. when smough goes around a pillar, run behind another one (don't stay close to it because he can hit you through them). ornstein won't get stuck and it will be sort of a 1vs1 fight. once you have defeated ornstein, stick to smough's belly to evade his attacks (apart from the hammer-trampling one and the butt slam) and attack him once or twice after he misses one of his attacks. when you see lightning starting to charge on him, it means he is going to use the butt slam. roll away three times as fast as you can and don't go back to him until the electricity has completely disappeared (keep the shield up just in case). not attacking him too many times in a row in this part is important, or you may find yourself in the middle of an attack animation while he uses the butt slam, which isn't nice.
I managed Dark Souls 2 but I think this game is just beyond my skill, unfortunately.

I don't have much experience fighting them 1on2, but here are some tips I can think of:
1) Try Fire. Smough especially is weak against fire, that is, if you have decent fire options. I used Ascended Pyromancy Flame +5 (and it killed him like within 10 seconds) though... But still, fire beats phys., imo, if you have a good fire weapon/pyromancy, of course.
2) Game of Patience comes in mind. Sometimes they bug and don't attack for a while, or you can keep one behind a pillar (Smough's charging attack comes in mind). Something like a spear would be good to use the opening you get.
3) Make use of Solaire, while he's alive. He usually dies to this bossfight but he can distract one of them. Then, you should switch to your best weapon and try to deal as much damage as you can to the other one. They're really not that difficult alone - you should have experience from the Old Dragonslayer and Smough's kinda easy
4) Don't play when you're angry. I did this mistake on my first playthrough against O&S. 40. ♥♥♥♥♥♥♥. Tries. 5 with summons. Just... don't do it.
I haven't tried fire yet, but I might be out of luck because I don't think I've collected the Fireball spell and I don't think there's any way I can get it because I can't get back to Firelink Shrine right now. Lightning Spear will have to do. Guess I will try the circling back technique and be mindful of the pillars whenever Smough's doing his charge attack.
I do indeed have experience with Old Dragonslayer from Dark Souls 2, so if and when I manage to down Smough consistently, the second part of the fight should be fairly straightforward.
(I just have to kill Ornstein last because I want the armor.)
2. Solaire can draw aggro, but he's weak and dies easily.
3. Smough is harder to kill first, but Super Ornstein is easier. So first timers should still go for Ornstein first.
4. I'm not sure what you're saying, but it sounds like use co-op. Yes, just not Solaire. Solaire increases boss HP and always dies.
5. This actually makes sense. Fast roll and learn those dodge timings.
6. O&S is the hardest boss for first timers, outside of BoC and the final boss.

2. prefer rolling instead of block (below 50% equipload)
3. try to kill smough first. smough can be dodge easy when close up. n mega ornstein cant hit you when close up, only the buttstomp can.
4. use enviroment. smough cant charge around those pillar. hell be stuck if your on the other side (mega smough too). easy to kill by range or magic this way./ ornstein will bug himself around the pillar. careful.
5. there still is the npc summon solair, he can tank the other one until you kill 1 of them. guess he wont survive to stage2.
