The best weapons for a strenght build are : the demon's great axe, the demon great machete, the large and the great clubs, the man-serpent greatsword, and the mace.
If you have 18 in dexterity, the black knight weapons are very powerful, and the hand axe is very useful and pretty fast.
the reason people stop at 40 is that after 40 you hardly get any bonus for each point spent it is just the way the game is built. On a weapon before 40 you might get several poitns of damage per strength but after 40 it is like one point of damage so not really worth it.
btw the reason many of us stop at 27 strength is because you get a 50% bonus to strength when you two hand a weapon so with two hands it counts as you have 40 strength thereby maxing out before the caling drops out but that means we switch to two hands before a swing. It depends on the weapon of course and how far you plan to go level wise etc,.
as for the eternal question.. what is the best weapon.
the best weapon is: the one you like. seriously it is more about the moveset then anything else. Yeah a crystal demons great axe does the most damage in one hit, but it is also a moveset I personally hate as it is waaaay to slow so I refuse to use it. I rather use the butchers knife or the reinforced club as I personally love those movesets. and since you can clear the game with practically any weapon pick whatever YOU like the moveset on.
Second, why the Claymore on a STR build? Also, what's the 22 Dex for?
You might be good with 3 spells, but with 1 more point of Attunement, you could have an extra spell slot if you need and with 3 more after that, yet another slot if you still need more.
as for weapons, i have a couple with me all the time. the great demon machete, the claymore and grant (mostly for catacombs). i have the (uncursed) greatsword of artorias but i just dont have enough int and faith to do comparable dmg to my claymore.
i keep those on hand depending on situation. some bosses have faster attack speeds so a slower weapon can be a bit dangerous and could get you in trouble if you dont time your attacks correctly. and some bosses (like four kings) you can do 1 attack between theirs with a slower weapon but 2 with a faster. with the demon great machete i do 750dmg with 1 hit but with my claymore i do 550 but i can do 2 attacks, so thats 1100dmg.
im on ng+5 on my main guy and the claymore is still very viable. having points in dex is always good to do more dmg with your bow if you use that.
scaling uses letters to tell you how well it uses a certain stat. from better to worse in order are: S, A, B, C, D, E and ( - ) wich of course has no scaling at all like for xbows, its just flat dmg. each letter has a range, C can be (for example) between 50-65% of stat use. the claymore can have a C in dex and use 65% as where the zweinhander also have a C in dex but use 50%.
for strenght weapons if you go here http://darksouls.wiki.fextralife.com/Weapons you can search weapon types. under the section Requirements - Param Bonus and look at strenght (first column) you can see your demons greataxe has an A as base scaling and goes to S at 14-15 with normal upgrades. for a str build thats basically where you wanna look.
from memory theres no medium or fast weapons when you want to use a heavy str build. for medium speed weapons you need to go more in the quality build or go with a large club but it will of course do less dmg then a great club.
like i said earlier, for some bosses it is more benificial to use a (somewhat) faster weapon then a slower just to get that 1-2 more hits in safely. i think that i used the claymore on super ornstein in ng+5 for that reason. and i like the moveset..
so what it basically comes down to (in general): str build do high dmg per swing but slow swing speed, dex builds do low dmg per poke (rapiers and the like) but fast swings.
you can do like most of us and just start another toon and try how a dex build feels like. i still prefer a str/quality build but thats just me.
my demon greatmachete at 50 str gives me 665 attack rating from memory. choose a weapon with an A or S scaling with a moveset that you like. dont use boss weapons imo. the normal upgrade path is better for a high str build. just buff yourself with power within and darkmoon/sunlight blade. resins arent all that effective.
high str weapons would be: demons greataxe/great machete, great/large club and grant for catacombs with high-ish faith and some trolling with the 2 handed strong attack ;). thats basically it for pure high str builds. for more viable weapon choices you need to have points in dex.
