There are also times when you can summon an NPC or/and human players to help you fight bosses. You must be human to do all of this.
Demon Ruins. Lost Izalith.
You don't need to actually reverse hollow to get the item find benefits. Maxes out at 10 soft humanity for item find. No need to go human to get the benefit.
I really only reverse hollow if I want to summon for a boss (not required, they add 50% hp to the boss anyway). OR mainly do it to kindle bonfires and when I have spent all my souls and feel like some PVP. Basically when you're human, don't carry souls/high humanity if you don't mind the risk of dying. Carry what you are willing to die with and have to go recover.
Open your status screen with 10 humanity and hollow vs. 10 humanity and human. Both will have equal item discovery.
