After you pick up the gold hemmed set he will ALWAYS do a lava splash. Run up to him, wait until the splash is done (make sure you don't get hit, it might oneshot you), THEN make a dash for the fog gate. Always take the L shaped tunnel on your left. I do this every time and I have yet to be killed by him once.

otherwise pinwheel, but thats mostly because people don't fight him until they need to go to tomb of giants, which is late in the game when you're quite powerfull
Lautrec would be the easiest mini boss I suppose as you can just shoot him from the steps with poison arrows and he will die before he moves. I don't think cheese methods were what the OP had in mind for this discussion though.
On my current playthrough 4 Kings was the easiest along with Pinwheel, although the 4 kings is the hardest so far nearing the end of NG+...
Moonlight butterfly with magic (or with the NPC phantom) is a cakewalk as well.
I had a ridiculous easy time with Artorias as well. Mind you he kiilled me the first time but with the green blossom the guy was laughable solo.
