The gargoyle axe has a D for strength scaling, and a C for dex scaling - so it gains a little extra damage with your strength and a bit more damage from your dexterity.
Stop summoning Solaire and other players and fight him alone that, with 2 summoned phantoms (if the extra HP amount per phantom is 50%) he would have 225% of his HP, effectively doublnig this bosses hitpoints, making this fight very long and painful !
Watch out for moves that expose him aka : render him unable to fight back !
Then target his tail which is obviously giving you the most trouble, whack it a few times and back off

Well, no idea if your problem's been solved yet, but as a few people already said:
1) Do not summon NPCs for this fight. Each phantom increases the dragon's HP for, err, 50%? Anyways, a fair deal of HP gets added up to the boss if you summon a phantom, players included.
But a player would know what to actually do in that fight instead of getting killed by the dragon.
2) If you go this boss alone, there's a simple and failproof strategy to it.
Basically, you only have to stay away from him until he hammers his whole body into the ground.
Then, he'll remain still for a few moments before charging straight ahead. Once he stopped charging it is safe for you to start attacking his hindparts.
Just get a bunch of hits in until you're out of stamina and back up.
Keep repeating that process until he's down. And be careful, sometimes he tends to chase you for a longer amount of time or will unleash a "barf"-attack. You better back up from that goo - it depletes durability pretty quickly.
3) In case you want the tail-weapon, be sure to hit him where the ring on his tail starts - the part of the tail that is closer to his body will also count as damage inflicted to his body.
4) If he grabs you start mashing your attack and block button on the controller.
That way you can escape a majority of grab attacks from enemies (such as the fooliage in Darkroot or the globs in the Depths) and bosses.
If you're fast enough you should even be able to negate all damage. I suppose I wasn't ever fast enough though.
5) And a piece of advice, if you're willing: Be more patient with the game. Some bosses have a ton of health, other have little health but will make it hard to hit them in the first place.
Just be patient with the game, give it a few tries, don't just go attack the boss - keep your distance and observe his moves.
Espescially in the 2nd half of the game you'll need that patience.
This boss is mostly a trap for people who keep relying on summons, since the NPC summons only beef up his health bar then die immediately getting run over by the dragon.
I only ever died to it when i got too greedy, it takes a while but it's really easy to just avoid literally all of his attacks and poke away until he dies.

thx fer this put together. and trust me this one boss that i havnt beaten yet destroyes my patients as he forced me to wait over 5 ♥♥♥♥♥♥♥ minutes until i could attack...greedy bastard dragon.
oh ive tried that... those dragons rekt me with their MLG fire. i dont think im goin back there.
Have you tried bating their attacks in another direction so you can run past them?
