Anybody got a good knight demon's souls build?

I want to do a build that looks like demon's souls fluted set with knight sword and knight shield. Anybody know a good way to immitate this?

[Bones]

Dragoncrest shield, longsword, combination of knight & elite knight set.

Based on that picture I would swap for elite legs and dragoncrest shield. Dirtbag's configuration is significantly better though.
