Is Pyromancy really "easy mode"?

It's the one build I'm yet to try. I once heard it's quite overpowered and makes the game easier.

Unlike miracles and sorcery, the only stat to level is attunement. So it's a lot more viable and can be used at sl1. However, I would have to give "easy mode" to dark magic.

Only if you learn how to use it. As long as you're running around throwing fireballs, it isn't OP. When you start using Ascended Flame +5, Bellowing ring, Crown of Dusk, Power Within and Great Combution/Fireball together, you will be OP.

Just an example, NG7* Seath works like this:

1. Activate PW
2. Break crystal
3. Run up to him and spam GC
4. He's dead before he could recover from being stunned by the loss of the crystal

However, as you need a lot of souls to upgrade your flame and to have attunement slots and to have enough uses of said pyromancies, it really gets OP in later NG cycles, not in your first run.

However, sorcery can be OP right in NG. Crystal Soul Spear and Dark Bead have insane damage one-shotting almost anything. (4-5 spears for Artorias/Manus/Kalameet max.) For max. effect, have 50 INT, Bellowing ring, Dusk Crown ring, Crown of Dusk, Tin C. catalyst and also Power Within (no upgraded flame is required). The only price is having almost no hit points, everything one-shots you. However, it works vice versa, so you can even one-shot Gwyn with Dark Bead.

No, it really is not.. Sorcery is quite weak unless you spam levels into intelligence.. As a matter of fact; Soul arrow itself tops out as stronger than soul spear because of how many casts you have as opposed to soul spear depending on your Intelligence stat.

Clay Bones first comment was saying something along the lines that magic is for noobs. Personally, I don't care since magic and miracles were used by everyone in demon's souls.

Okay, you want an actual answer? Ranged magic (honestly ranged attacks in general) means that your success is weighted far less on stamina management and positioning. That's most of the challenge of the game. I'll give as much effort replying to you as you do to me. Saying something isn't strong because you have to invest in it is not a well thought out reply. Also I give zero ♥♥♥♥♥ about your hours.

That's my whole point that you seem to be missing.. nothing in this game means jack if you don't plan properly.. with all of your hours, you have nothing useful to say but flaming content because you have low-self esteem..
