Seems more likely that it was created by a contract artist who studied the art style a bit and then came up with something cool based on existing gear. And in the end the producers decided to flip it resulting in the random sword in the left hand.
My last character was sporting a Black Knight Greatsword, either a Greatshield of Artorias or Silver Knight Shield and a complete mix of light and medium armour. And the shield on the cover could easily be a Black Knight Shield. Neither the front design nor the size add up for Artorias'.
The Western cover is not a good indicator for anything regarding lore.
Here's a good video covering the main points.

This cover was not done by the original art department of the game. It doesn't cover anything about Artorias.
Considering how uninspired ( or downright bad) some game cover cover art could and still can get, it doesn't suprise me. The later official artworks, "Elite knight guy sitting at the bonfire" and "Artorias in his signature pose" (or more Guts in his signature pose) for the dlc turned out pretty neat.
