Why is the 4kings fight not labeled 5 kings?
I manage to kill 2 of the kings then another one spawns and I have 3 whamming on me with no remorse like there's no tomorrow....NG+ they are hard to deal with even with Demon's Gaxe.

The name in the Japanese version is something to the effect of "At least four kings". It's anywhere between 1 and 7 kings depending on what happens.

Because the name doesn't come from the amount of kings that appear in the boss fight. The name comes from the games lore. There were 4 great rulers in new Londo that succumbed to the Abyss.

There are 4 kings. They are linked by their one soul giften them by Gwyn. The are also undead, just like you are. When you die, you go back to your bonfire only to come back a few moments later. When one of the kings die, the go to their bonfire in the depths of the abyss only to come back at you a few moments later (as seen by them coming up from below when they arrive). They do still have some honor though, hence why they start the fight one at a time, but after countless years stuck alone in the depths, they have grown impatient and start to break their honor to join in the fight.*

*This hypothesis is, of course, pulled directly out of my ass. Perhaps one day I'll get on my super tanky character and see how many I can have fighting me at once...

they can be more because they didn't code things properly so you can kill 4 but their shared lifebar can still have HP left, which makes them keep popping up. I'm pretty sure, in fact, that there can't be more than 4 at a time attacking you.

Makes sense, managed to kill them at 4 before fifth one spawned. I thought this boss followed lore and in lore there was 4 kings, not 5+. Generally game bosses stick to their lore so it threw me off.

Maybe it does stick to the lore. We don't know what happened to the kings after they were taken by dark. Maybe they exist as a single entity and the bodies that appear are how they manifest themselves.

I like my "they are undead like you, and thus continue to respawn at their own bonfire below the abyss until you are able to do enough damage to overcome their grasp upon their own soul" theory. ^_^

It's clearly intentional that the kings appear one at a time in around 60 second intervals and that you could have 4 kings on you at once. I'm not sure how you could possibly assume, with those things being intentional, that the fact that you could have more than 4 kings was not also intentional, but was poor programming, or that the devs could not take the bosses max hp and divide by 4 when they were able to make the entire game, or that no testers for the game never had 5 kings total. I stand by the idea that it was completely and 100% intentional and part of the lore.

Sorry if this seems like I'm attacking you, I get bothered when people say something is poorly programmed. I'm going into programming and it bothers me when people say that when 90% of them don't know the first thing about programming (I'm not saying you don't, since I have no idea).

anyway, I was going to give a long answer with my explanation, but I realized a simple detail: it would be way too simple to check if 4 kings already appeared to not do so, so them keeping to appear after the fourth is probably intentional. my reasoning also had a flaw that I had overlooked.

the explanation is still unclear, though. you could say that they simply manage to come back, but why would they stop after you deal a certain amount of damage to them, even while there are more than one present when you deal the last hit?
you could say that they go back to the bonfire, but again, what stops them from respawning again after a while? (but this applies to every boss and NPC: why do they not respawn while we always do?)
you could say that they are more than 4 for some odd kinda-lore-friendly reason, but why call them 4 kings then? this was my principal reason to suspect a flaw in the script for that battle.
