I wonder if OnlyAfro regrets sometimes the "sins of his youth"...
But i guess him getting stunlocked and killed by a Giantdad would only overflow the youtube comment section with cancerous memes...
surprised me at the time because when he told me this, it was oh, very late 2013, early 2014? not even a full year since the video was actually released.
(Not my own words, mind you. That is the stuff i got told when i started with Dark Souls)
Giantdad (He's back)
People seem to be forgetting, or were not around, when the origin of this existed. "he's back" refers to the 99% community use of the incredibly overpowered dark wood grain ring.
Here is some information for you.
With the dark wood grain ring, you only needed 44 endurance to FLIP roll (with with giantdad items) with the MASK OF THE MOTHER (which used to be +15% HP instead of +10%). If you used the father mask, you only needed 37-38 end I think (father mask was also nerfed, 10 to 5% I think).
Base equip load is 40 now, and 40 more with endurance. (base used to actually be 20, so at 40 endurance you only had 60 weight to use, this was patched pretty early on). This means 80 load. With RoFaP, it is 96. This means with the old Dark Wood ring (flip if under 50%), you had 46 weight to play with. The entire giantdad set including the zwei, armor, shield weighs like 48.8 or something. Very easy to reach.

I was able to use the black knight set for 77 poise, the mothers mask, and the heavy-ass demon greataxe, and flip roll. I also had to use the havel ring, but that is because the demon greataxe is one of the heaviest weapons in the game next to the Grant (the demon greataxe weighs almost as much as the elite knight armor set). With something like a Uchi, the RoFap or hornet ring could replace that (Hornet also uses to do +50% critical damage instead of 30% or so it does now I believe)
Elemental weapons used to be stronger.
Right now, Lightning weapons are 5.00x base damage, and chaos is 5.19x. Lightning/fire used to be 5.55x and Chaos used to be 5.60x. (chaos was use more because it has more fire damage and less physical, fire has more physical and less fire damage) So instead of your lightning uchi having 450 total AR, it used to have 499.5, which I believe rounded down? Basically elemental weapons used to be 10% stronger.
SCALING used to also be a lot WEAKER. This meant that even ignoring the split damage types, the uchi, the estoc, the great scythe, etc all used to be much weaker because even with 40 dex they were not that amazing. I do not remember the numbers here though... This was fixed thankfully. A lot of high-level pvp before patch 1.03 or 1.04 (forget) used to be high vit builds because a +5 chaos zwei or claymore or garg halberd or greataxe (lol greataxe) were massive damage.
So when people say stuff like
"Meh. It's not any better than any other pvp-oriented builds..."
It was not supposed to be a PVP build. "he's back", or the giantdad, is a joke. It's inefficient compared to what it used to be. It used to be one of the best possible builds that existed in the game with absolutely no weaknesses. But it was nerfed hard and now requires 66 endurance and havel ring and losses fast flip, and lost 10-15% of it's damage. Thus still being able to play with the build after the nerf, giantdad "came back"
Now it's just a decent high poise build.
Vanilla dark souls had some really stupid ♥♥♥♥. One of my early builds was a level 50 with a hornet ring, flipping, 50~ poise, with 1600~ Hp. We tested what weapons did the most backstab damage (rapier > estoc =~= bandit knife). Hornet and a +5 chaos rapier did 1300-1400 damage backstabs. I at one point in the demon ruins (demon ruins was a popular pvp area) went like 25-1 with that build, it was really ♥♥♥♥♥♥♥♥.
