How to put sword away?
I dont want to hit an NPC by acident, so how do I put the sword in my belt?

I hit the firs undead merchent like that and now Im restarting the game...

You can't, though you can switch to your second weapon slot and if that's empty you'll be left with your fist, but you can still attack with that.
You'l have to be careful around npcs :angryofficer:
if you haven't equipped second weapon in your hand then just press right key on xbox/ps controller..

95% of the game is centered around combat. Letting you put away your weapon would be unnecessary... this is not like Skyrim.

If you just switch to fist you'll be fine. You have to do a certain amount of damage to aggro NPCs so punching them once or twice is okay. I just hold my controller differently while talking to NPCs so I won't hit triggers or bumpers

This. While I think a sheathing animation would be really cool...it would be a bit pointless since the entirety of this game is centered around combat.

Couple things. There isn't a way to sheathe a weapon, unfortunately imo as I think it would be cool. Let's be real, it wasn't left out because it would be unecessary, it was left out because there aren't enough buttons on a controller. Anyway. You don't need to restart your game because you aggro an NPC. If you piss somebody off you can talk to the guy in Undead Parish church and get absolution from him. It's not free but it's probably faster than restarting, depending how far in you were. And really even if you kill an NPC it's generally not game breaking, although I would discourage you from killing a blacksmith unless you're very sure of what you're doing.

Its better just to get to know the NPC and develop a personal relationship so that if you do by mistake hit your friend they will understand and forgive you without having to pay some extortionist tons of souls for "forgivness." Just because you guys are undead does not mean you cant be decen humans

Interesting side info: There seem to exist models and placement points for sheathed weapons.
For example the intro cutscene for the "Bell Gargoyles" boss fight shows the claymore sheathed on your back or the mace on your belt.

Yes because having a sheathe weapon option would be SOO bad. I mean, it's only a RPG, you know... a role playing game?

Why would you even sheath your sword? Just because someone is sentient and talking to you, doesnt mean they're not going to kill you for your souls. From a lore perspective I woudn't go near ANYONE in DS without a weapon drawn.
