Most players use Lan USA Lan Europe or Luxemburg. I know I spelled that last place wrong, but I am no expert on towns on other continents.
Except, not. Region lock "died" on January 19th 2015, but the game via steamworks still uses your steam downlaod region to establish initial peer-to-peer connections. It's supposed to then search other dl regions for additional connections while giving those using the same dl region preferential treatment.
However, after a world wide crash on september 12th 2015, the "search other dl regions for additional connections" seems to have stopped. I play almost daily and I mostly co-op... after the 12th of September I've only been able to connect with others when we were both using the same download region.
Even if we were all together (how that would work without a dedicated server I have no idea. There is no dedicated server for Dark Souls 1), the game defaults to a maximum node count of 20. Assuming that each node is not only an active connection to another player, but a proxy to everyone that player is also connected to... everyone having 20 unique nodes would mean 400 people connected to each other. Given that there is anywhere between 1000 and 5000 people playing DS at any given time, that is hardly everyone.

Those are probably the most popular atm. If you go LAN Event, I suggest the one closest to where you live to give you the best chance of minimizing latency issues.

In Dark Souls 1 the Way of the White, the Princess Guard, and the Warriors of Sunlight are the co-op specific groups. Being in one of those 3 is supposed to increase your chances of finding friendly summon signs and make it more likely your summon sign will be found... however, I have not seen any concrete data on this.
Being in the same covenant as someone else does not have any known impact on summoning.
Furthermore, there will always be a chance for invasions. Every game world can have no more than 4 people in it. 1 spot is for the host (obviously), 1 spot is always reserved for invaders. The other 2 spots can be either friendly phantoms or more invaders.
Of course you can go LAN US when you are somewhere in Europe, but be prepared to deal with bad ping.
