For me I like the tail hacking simulator I use on Seath.
The reason is because well, firstly by circling around him, Seath will go around beating down any clams I brought into the room from me sprinting past them into the boss arena. And secondly, my method completely removes the possibility of being cursed from this fight since all you need to worry about is the oh-so-easy-to-dodge tail attacks and the occasional AoE that you kinda just pray you can tank through (and once you do Seath is toast since he doesn't spam that often, at least in my experience). As both of those attacks don't stack curse.
But your method is good too.
EDIT: The AoE shouldn't 1 shot really. I am playing a DEX toon who is barely well covered in armour since I wanted the <25% load (but I do use Havel ring) and only had 29 VIT when I faced Seath. His AoE took about half of my HP, it isn't too bad.
