I'd make a quality build and use the Longsword or Sunlight Straight Sword. For the shield I'd go with anything with 100% phys block and realistic look. Maybe the Tower Kite Shield. Or Crest Shield. Or Dragoncrest Shield. Up to you.
Using abbreviations isn't that helpful for a new player ^^
Any Black Knight weapon is good tho. The Sword. The Halberd. The Greatsword.
They're STR weapons, but require having 18 DEX for using them properly.
(But dead points in stats can be annoying.)
If you don't understand how the Stats work (and you don't want to check a wiki):
It is maybe useful to think what you want to focus on
Vitality: Hitpoints --> much health, much good, disminishing returns at 30, 40 softcap 50
Endurance: Stamina, Equip load, Bleed reistannce ---> Most important stat in the game, softcaps at 40
Those both are no-brainers.
Then you pick one of those damage stats you want to focus on: STR, DEX, FTH, INT
You can raise a seondary stats.
Typical examples are the 40STR/40DEX or 40DEX/40INT builds. Or you can dip into stats for goodies and equip requirements. A example would be 16STR for DEx chars to grab some better shield and bigger weapons(which still scale with dexterity)
