Second, class basically only determines your starting stats (which you can change) and your starting gear (which you can change)--by the start of the midgame, all starting equipment from all characters will be available. So it's really just a matter of picking a starting set you like. Feel free to experiment with all the classes through the tutorial area--it's short, but long enough to give you a feel for the weapons you'll be using.
third "knight is slow" the knight is only slow if you leave his armor on. Feel free to take it off.
Fourth--DSFix, PvP Watchdog, and DSMFix. They're all stickied on this forum. Check them out.
Fifth, and finally, if it's your very first time playing, don't take the master key as your gift. It's very useful for veterans who know what they're doing, but for new players it will sequence break the early game to hell and get you into trouble. (unfortunately none of the other gifts are really all that good.)
Also you should pick class by your play style. I personally think that Deprived is the best because he has strong weapon, light armor (no armor, lol) and it can be whoever you want (because all skills are the same). At least that was my choice and I really liked this class while playing the game. But everyone plays differently, so I think you should try them all.

Poise is what matters in armor stats, and its weight of course. Check out "poise breakpoints" on the DS wikidot.
But for Boss fights they are useless most of the time, try to go naked in boss fights and only have your main weapon equipped 2-handed.
Check out the equipment load breakpoints:
- 0 to 25% ==> fast roll (you want this)
- 25 to 50% ==> mid roll (still ok outside of boss fights)
- 50 to 100% ==> fat roll (only if you know you are not gonna need a single roll before the next safe spot).
Another similar class is the Bandit which has the best starting shield & weapon (battle axe can carry you to mid-game if you like its moveset)
Pyro & Sorcerer have a strong early game (if you keep those damage spells for bosses), but then it will take time to find better spells. Pyro's "armor" has some good environmental defence for its weight too (but no poise of course).

I'd honestly would go as the deprived. If you're a beginner and just want to make your own build, then deprived is perfect.

You don't really want 11 points in both faith & int, until you are uber-leveled. And resistance is useless => the lower the better.
And starting items are terrible on deprived, you should try several classes until you find the one with the starting weapon/spell that suits you the most.
