Rapier vs. Estoc
I'm leaning towards the Rapier since it has a more familiar moveset to me, the same scaling, and only slightly lower base damage at level 15 than the Estoc (less than 10 points' difference). What are your opinions for both PvP and PvE? Are some of the slashing swords better?
Also, if anyone knows any impact-based weapons useful for dexterity builds, that'd be great.

I also think I should just say here that in my Dexterity build (10 strength, that's it), I got both the Black Knight's Halberd and Black Knight's Shield on my first two BK kills, and on my Strength build (30 Str, SL 44) I killed about six BK's. Not one dropped anything except their guaranteed drops (Titanite and such).

Anyway, what is your idea on this? Rapier vs. Estoc? Also, what upgrade path should I take? I am using Intelligence as a secondary combat stat, so I'm leaning towards Fire +10, but I feel the community should decide. They (you) seem to know their ♥♥♥♥.

rapier has higher crit rate so if you're backstabbing/riposte it's better though it can attack with shield up like spears
estoc has slashing move that can be useful in pvp and is obviously longer
both get bonus from leo ring

bandit's knife, silver/gold tracer area also great for both pvp and pve ofc they are short but if you can parry/backstab properly then they're blast (excepting gold tracer - has normal crit)
also you can bleed spam targets with bandit/gold and toxic with silver so again plus

your intelligence = fire doesn't make sense at all lol and if you need fire weapon probably chaos is better choice due to humanity bonus dmg.
magic+10 if you're going fo upgrading both dex/int and enchanted if only int.

Then Great Scythe +15 buffed with crystal weapon will be great for dex/int build, if you have 16str moonlight greatsword that scales only with int is uber for mages.

For pve I'd say the estoc definitely, the better range and the horizantal slash on the one handed R2 will help a lot. For pvp it depends, the rapier has higher critical damage but the estoc has higher base damage, making it a better choice for turtling. I'd recommend the rapier though, it's really light which makes it excellent as a secondary weapon.
You should definitely go for regular +15 if you're leveling dex to 40, if you make it elemental (lightning/fire/chaos) you lose your scaling bonus and your damage will be a lot lower. You might also want to look into Velka's rapier if you're going for INT, it's not that good but it has a really flashy moveset, very fun to use.
Don't know what you mean by impact-based weapons though, care to explain? Also BK drops are random.

I said that I'm already invested in Dexterity, so the A-rank scaling for the Moonlight isn't very good for me.

Impact weapons deal impact damage. Examples include the Club, Large Club, Reinforced Club, and Great Club. Most (not all) of the hammers do impact damage.
I know that the BK drops are random, but I find it ironic that my character that will not have sufficient strength to wield the Shield or Halberd received them at the earliest opportunity. I'm not saying they aren't random, but rather that my luck is good and therefore horrid.

There isn't any great hammer suitable for mage and it's called strike dmg here not impact.
Also moonlight greatsword has ranged attack which makes it so good becuase it's pure magic dmg and has high knockback, sword itself has all greatswords cons/pros but doesnt deal split dmg so is one of better possibilites outside of normal+15 + crystal weapon buff.

There are no dex weapons with strike damage, if you want to use them anyway I suggest you pick the reinforced club or the mace and upgrade them to enchanted. I'd say hammers and axes are the weakest weapon classes though, if you can't go +15 I wouldn't really bother and just use them on a strength build if you really want to.

Actually most good dex weapon excepting mentioned daggers and rapiers require about 14 str to use.

This, not leveling strength at all will limit your build a lot. If you get your strength to 16 you can use the flamberge and the black knight shield/eagle shield for rapier turtling.
