I was between 55-59lvl

Having high poise[darksouls.wikidot.com] can also make this (and many parts of the game) a lot easier.
Also, difficulty is subjective. There are many parts, you won't struggle as much as other people did, especially if you've played a souls-game before (they're all very similar).

But don't worry about being "too strong". It is still a RPG, so stats will matter, which is why difficulty kinda drops off sometime after Anor Londo. But there's no such thing as being "overleveled" for PvE and besides, your SL is pretty normal for post-Anor Londo, though SL on it's own hardly matters; It's what you've leveled up (RES is 100% useless, for example). The most important character upgrade next to HP is your weapon level.

Never feel bad about being overleveled I remember the first time I did the Catacombs with an upgraded divine Mace I blew through it like it was nothing.

I did them on my first try too, though I consumed humanity to heal during the fight, I did feel like I overleveled when preparing for Ornstein and Smough, tbh everything after that felt a lot easier for me , maybe because I overleveled.

I think the difficulty kinda plateaus after Anor Londo just because you can go anywhere from that point.

I will say hp are not so very important. If I not been hit and have enough stamina I can fight long with a good armor ;)

4 kings was ez on ng+

If you don't get hit, you can use a broken sword SL1 naked and nothing is important, if you have the patience.
But just like with "more damage", "more HP" does make these games a lot easier; The point is to be able to make more mistakes. And you can still abuse high stability shields and poise on top, especially with chaos-weapons, that don't need you to level STR/DEX, so you can focus on VIT and END instead. A certain legend showcased how silly and broken this game is by doing just dad (i'm not sorry for that pun).
