Moonlight Butterfly Soul

What should I do with it? Item that are crafted (Spear) from it scaled with Int, and the shield is kinda meh, and I'm on Str build now. Should I just craft it anyway?

Well,keep it for now or use it to get around 6k souls which is not that much tbh
If you're looking to get the Knight's Honor achievement,craft Moonlight Butterfly Spear or Crystal Ring Shield(you need every single unique weapons and shields to get the achivement though)

Well since your doing a strenght playthrough i would suggest making the shield and putting it in your second left hand slot to use as a weapon as you never know when the ranged magic may come in handy.

The damage is not that good and has long start up lag

if you use it just now you only get about 1,200 souls so unless you badly need the souls just hold on to it because later in the game you get the ability to give it to someone for 8,000

Also kind of as a check list of which bosses I've killed.
