(The same strategy works for another hydra present in the game, you just pull it and use a similar blind spot based on the spot you are fighting it, prioritize the heads that are more of a problem for you, rather than the ones who are closer in proximity, as they might be ones that will constantly miss you or not damage you at all with a shield)
If you are playing as magic or ranged then you should shoot your magic or arrow the moment the heads are on the ground. Get a 100 physical defense shield, when you see the attack coming raise it, as soon the heads land shoot the arrow by shooting at the body (you can kill the hydra by depleting its HP instead of cutting the heads) and it will damage it. If the heads are already back though, the distance might be too big.
Overall it takes some practice; I had to kill it two to three times with different builds before figuring it out completely.
