Black knights you can actually parry relatively easy, so consider that.
If the tower knight is your problem, consider using a faster weapons. I haven't played with Drake Sword but I assume it's not too fast. Lock on the knight, when he swings roll back, then roll towards him, hit and roll back. Even if you don't do much damage to him at once, it's almost risk free as you attack and retreat fast enough.
You can also learn to roll though the attacks but that's riskier and the way above is safer
The thing is I just don't get the opportunity to hit him. His attacks seem faster than mine. If I dodge and then run in to hit him, he starts his next attack that I have to dodge and so on. And it's not one attack but often two or three.
Try using the Halberd as it is a long range thrust so you can hit him from safe distance.
