If you kill all the mimics in the game in one playthrough (unsure if DLC counts) the last one is guaranteed to drop his head if one didn't already.

That also applies to the 2 Gargoyles in Anor Londo.

try to farm it as I said, or maybe they'll drop it at the DLC if you already killed everyone in normal game.
