They're there because that's just how the game works. When you write a message (using an item you buy from a Merchant) it will appear in other players worlds depending on your connection to them and the DS servers.
As for which ones are trying to help and which are evil...well...experiment and find out.
Initially, they were planned so people could leave hints or clues to other players. Main issue is, the amount of words available is very limited (Why U can no place a "You need SUMMON" sign in front of Super Londo Bross so people can get the idea that 1v2 O&S is usually a bad idea?)
Now, you can basically find three types of messages:
"Helpful" messages: Like "You need Humanity" (which usually means there's a bonfire nearby; that actually doesn't mean the bonfire should be enkindled, you must think if a bonfire is worth being enkindled or better save your humanity for more important ones, specially early on). "Beware the boss/fat guy/..." (which usually means there's some sort of tough fight incoming), and some others (yesterday found a "Try rolling" one near Anor Lond's smith, which is the way to get the Hawk's ring from the chest behind him).
"Useless" messages: Like The classic "Praise the sun" or "I did it!" aftwer a boss fight signs.
"Troll" mesages: The most common being the "fake wall here" on (usually) hard to reach locations where there is no fake wall.
Once you are in-game, you'll "slowly" connect to "nodes" (other players worlds), and summoning signs/messages/ghosts/bloodstains will start popping in your game. Getting those initial couple nodes is currently very hard (it can take hours to get your first node, unless you use DSCM), but once you're linked to some nodes, other nodes those players atre linked to will be shared to you and in the end your client will keep the nodes "closer" to your character (players in your same area or with a similar level).
